Charquican
Charquican is a Chilean dish. It is a stew made from cooking chunks of potato and squashs. It may contain different kinds of vegetables such as carrots, corn, green beans, tomato, etc. Originally, it was made with dried horse meat (charqui), but it may be prepared with any kind of meat. It may be topped with a semi-fried egg.
A variation of charquican contains the common Chilean marine algae cochayuyo (Durvillaea antarctica), that is cooked in the same stew.
